With the onslaught of TV chef's and a vast amount of cookery programs, they all tend to lean to the same attitude that new food is the thing to cook. Although this is fine and I can show you many dishes from this modern age, I feel that the old Retro style of cooking is coming back into vogue.
Dishes like Beef Strogonoff, Steak Diane, Beef Wellington, Coq au Vin etc, all seem to be forgotten. I can't remember the last time I saw the likes of these dishes on menus in resturants and hotels around the country so, my aim is to go back to basics and teach you good quality Retro food from the 1960's to the 1980's.
