I began cooking in 1975 and attended the North Staffs Polytechnic Catering College where I gained City & Guilds 147,151,152,RSH,and advanced Hygiene certificates.

From there I went to work as an apprentice at the Grand Victoria Jungfrau in Switzerland for 12 months, I then went on to work on the QE2 for several years.

I worked my way up from commi chef to Head chef in many good hotels and resturants and have cooked for Prince Andrew, Princess Anne and the Duke of Kent to name but a few.

During my years of working in the catering sector, I have catered for parties of 4 to 400.

I believe in a calm but fun teaching method where  if it goes wrong we smile and try again!
